Now in the industry, you can usually either bake or cook. Yes, there is a difference. For me, the cooking is easy, but baking is my kryptonite.
These are some muffins that I love, and people seem to enjoy, so needless to say, they have followed me around.
This recipe is a little more difficult so I have broken it down to two days. Today is the frosting, and tomorrow the world…I mean muffins.
Do yourself a favor. Don’t taste the icing. Once you start, you can’t stop.
Rum Chata Frosting
12 ounces of cream cheese
½-cup of butter at room temperature
½ teaspoon of vanilla
5 tablespoons of Rum Chata
2 pounds of confectioners’ sugar
Mix all of the ingredients in a mixing bowl. Whip on medium speed until it’s well incorporated. Store in sealed container in the refrigerator until you are ready to use it.
