What's for Dinner?: Roasted potatoes

This weekend, I was at a dinner party where the host made some amazing roasted potatoes. 

At first bite, I had to ask what his secret was. His response was bacon. Like everything else in life, bacon makes it better. 

After a little joking, we talked it over, and he gave me the recipe. It’s a little different but has an amazing taste. It is definitely worth a try.

Roasted Potatoes


5 pounds of red potatoes, quartered

2 ounces of bacon fat

four diced bacons strips, half cooked

2 ounces of chopped dill

1 tablespoon of salt and pepper


In a roasting pan, place cut potatoes, and sprinkle with bacon fat. Add the diced bacon, dill, salt and pepper. 

Roast at 350 degrees for 30-45 minutes, stir, then continue roasting for 30-35 minutes more until golden brown.
